FOOD : A tasting menu is the showcase for
the kitchen’s integrated approach which breathes
imaginative new life into the best available Scottish
ingredients. Every dish arrives at the table in
peak condition, whether it be pork cooked three
ways (minced in ravioli, slow-roast belly, black
pudding) with an intense cauliflower cream, or exquisitely-timed
fillet of beef with a rich, smooth tarragon sauce.
